This recipe will be part of my Thanksgiving appetizer menu this year as well as our dipmas party menu. Grab a second box of frozen spinach and make a recipe of artichoke spinach dip.

  • Knorr vegetable soup mix - the dry knorr vegetable recipe mix is the base of this amazing easy dip. Don't be fooled, the recipe is not on the back of the packet anymore.
  • Spinach - I take help from frozen spinach for this recipe. Frozen chopped spinach is one of the best values in the grocery store, ounce for ounce and will quickly thaw.
  • Fresh Water Chestnuts - canned fresh water chestnuts are found in Chinese recipes but work so well in this recipe. They have a mild if not absent flavor but offer a delightful juicy crunch to this dip. Be sure to drain and chop them if you can only find whole.
  • Mayonnaise - When the mayonnaise percentage in a recipe is as high as it is as in this recipe, about 50%, you want to use full fat or high-quality mayo.
  • Sour Cream - Same with the type of sour cream you use in this recipe. Use a full-fat sour cream for a full flavor profile.

  • Fresh Spinach - if you can't find frozen spinach at the grocery store, use a pound of baby spinach in place of the 10-ounce block of frozen. Be sure to chop the spinach finely before steaming it down.
  • Artichoke Hearts - add another layer of flavor and crunch, dice up a drained can of artichoke hearts, and add it when you mix in the chopped spinach.
  • Green Onions - finely chop 2-3 green onions, green parts, and the white parts, and add them to the dip.

  2. In a large bowl combine all the dip ingredients, stirring to combine completely.

  4. Stir the dip before serving in a hollowed-out bread bowl with bread cubes and vegetable crudites.

  1. Dice the fresh water chestnuts into small pieces.

2. Cook the frozen spinach in the microwave for 2 minutes or until heated through. Using a paper towel, and a mesh strainer, press the excess moisture out. Discard the excess water.

3. Finely chop the cooked spinach.

4. Add the spinach and the rest of the ingredients to a large mixing bowl.

5. Using a silicone scraper or wooden spoon, stir all the ingredients until combined. Be sure to stir all the ingredients together and are thoroughly distributed throughout.

6. Chill in the refrigerator for at least 2 hours before serving. Overnight is preferred.

My mom always served the Knorr vegetable dip in a bread bowl. Back in the day, she had to special order it from the bakery manager at the grocery store. Thankfully, they are more readily available these days.

My favorite type of bread bowl to serve the dip in is the pumpernickel flavor. It pairs perfectly with this creamy dip. But pumpernickel boules are only available in my area during the winter holiday season.

Carrot sticks, broccoli florets, cauliflower florets, zucchini sticks and other fresh vegetables as well as toasted crostinis or crackers are other items to serve when I make this dip. But I love the classic bread.

  1. Using a serrated bread knife cut out the top and remove the inside of the round loaf.

2. Pull out the inside of the bread, and slice off the excess of the top.

3. Break up the bread into bites sized pieces.

4. Fill the hollowed-out round loaf of bread with the dip and surround it with the inner bread pieces, veggie sticks or other dippers.

Ingredients

  • 1 10 ounce frozen spinach (thawed, cooked, excess moisture drained)
  • 16 ounces sour cream
  • 1 cup Mayonnaise
  • 1 packet Knorr Vegetable Recipe Mix
  • 1 8 ounce can water chestnuts (drained and chopped)
  • 3 green onions (chopped (optional))

Instructions

  • Dice the fresh water chestnuts into small pieces.
