Easy Homemade Waffles, Homemade Waffle Recipe, Homemade Waffle Mix (2024)

We love homemade waffles in this house, but my “Go to” Malted Belgium Waffle recipe consists of a lot of butter.
Trust me, my Belgium Waffle recipe is worth the extra time, but I have been experimenting with an easy and quick homemade waffle recipe that uses oil.
I’ve found it…
“Oh Boy” Waffles...Yes, easy homemade waffles without any butter! Using oil instead of butter really helps on the budget and by making extras and freezing them, breakfast is a breeze during the week.
(I found this in my 1953 estate sale Better Homes and Gardens New Cook Book, and tweaked it)

Easy Homemade Waffles (without butter)

  • 2 1/4 cups sifted all-purpose flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 tablespoon sugar
  • 2 beaten eggs
  • 2 1/4 cups milk
  • 3/4 cup oil

Sift together dry ingredients. Combine remaining ingredients; add just before baking, beating only til moistened. (Batter is thin.)
Bake in waffle iron. Makes 10-12.

***Update on the Pantry Challenge: Since I first made these during my Pantry Challenge where I could only eat from my pantry for one month , I had to be creative. I TRIPLED the batter, knowing that our family consumes large quantities of food and I was hoping for a few extra to freeze.
I had a few bedlam moments along the way. I mixed all the dry ingredients, added the eggs, and then added 2 1/2 cups of milk because that was ALL I had. Yikes, and I had already tripled everything else.
But guess what? When you are committed to creative cooking for one month, you just ad lib.
Unfortunately, my fifteen year old waffle iron gave out and it would have been when I tripled the batter, so I used a sandwich griddle. Improvisation is key.
I’m saving up my Swagbucks and “buying it for free” because we really “need” two waffle makers or at least one that makes four waffles. Otherwise, waffles take two hours in our home. I can’t wait to reach my goal using my swagbucks. Don’t you love Swagbucks?

Hey, Jen! I love waffles, so glad you got another waffle iron. I would love to have one, not sure my cabinets can hold another gadget. But, if I found one for $5, I might have to get it. Can’t wait to see you at Blissdom!

Jen, I love waffles. And you are so right that bedlam moments do sometimes arise from trying to use what we have on hand, but hopefully our “creativity” pays off and we discover some great unorthodox substitutions. 🙂 And congrats on the new iron. 🙂

Try a bit of orange peel grated into the batter. Very nice.
This inspires me to dust off the ol’ waffle iron. Ours is a stovetop model that cranks out heavenly waffles. Come to think of it, though, it’s non-stick, which is toxic to pet birds (specifically my parrot), which I acquired some 20 years after the iron. Maybe I’ll send him out on the screen porch while I cook…

We love making Oh Boy! waffles! We’ve been using that recipe for years. My husband and our daughters always make some together for Saturday morning breakfast. Too sweet! We have tweaked the recipe- we at least double the number of eggs and we used dried milk (mixed with water) instead of fresh (tastes the same and we get to keep our fresh milk!). I love topping my waffles with cooked berries and cream. Oh, yummy!
Oh, and if we have leftover batter: I save it in the fridge and make Waffle Batter Pancakes for my girls on school days. They love it!

Sounds Yummy! To cut down on the fat content of the waffles, we substitute Apple Sauce for about half of the oil that the recipe calls for. You really can’t tell the difference. They are so moist and taste great! We also add just a little almond extract to add to the flavor. Enjoy!

The recipe I use may not be quick (b/c you have to beat the egg whites into submission- i mean into peaks), but it’s really good- and hardly ANY oil and NO butter 🙂
    Here is the recipe:
    2 cups all-purpose flour
    2 teaspoons baking powder
    2 tablespoons confectioners sugar
    1 tablespoon vegetable oil
    2 cups milk
    3 eggs, separated
Combine the flour, baking powder, confectioners sugar, oil, milk and egg yolks.
Beat the egg whites until they stand in soft peaks and fold into the batter (do not overmix).
Using a 4-ounce ladle, pour 1/8 of the mixture into a hot waffle iron and bake for about 2 minutes.
    Repeat with the remaining batter.
Top with the fruit and whipped cream and serve hot.
    makes: 8 waffles.

I use that same recipe, (well, the one you started with anyway) and I love them. They are simple, fast and make a bunch. I have eight children and I can get eight waffles (using a restaurant style waffle iron) out of one batch. Yum!! Now I’m hungry!

My favorite waffle memories from childhood are GREAT. My mom would make too many waffles (on purpose) and make monster ice cream sandwiches with vanilla ice cream that she would drizzle choco syrup across then freeze. Let me tell you: EVERY kids on my block came to our house for these in the summer. They’re soooooo yummy. But for the sake of not unhinging your jaw, try not to make them too thick 🙂

I’m thinking about tweaking it yet some more with whole wheat flour (maybe even add a little bran or other fiber) , non-fat half and half and trying to figure out a fat substitute that will allow the waffles to keep their texture…thanks for the inspiration!

I don’t usually leave a commentafter I try a recipe, but these waffles were to good to go without praise. The first time I made them just as you did (with a added 2 tbls. of flaxseed) and everyone loved them. The second time I used a cup of whole wheat flour and just 1 1/4 cup all purpose. They didn’t taste any different than they did before. The next time I make them I’m going to add some bluberries and see how they taste. Now I need to find a good homemade maple syrup recipe to go with it.

Tasted great, and slightly relieved and surprised to find a waffle recipe that didn’t need to have the eggs separated…
*tip for those that are looking for a healthier alternative, replace the oil with Yogurt, it does pretty much the same exact thing, and as a bonus, you can get fruit flavored and add fruit that way

Did they not bake up well in the waffle iron?
If you had all the correct measurements, then I am stumped because we use it all the time. So sorry.

I stumbled across your waffle recipe this morning. There’s no butter in the fridge and I wanted waffles for breakfast. I think I just found my “go to” recipe. It’s a definite keeper. The waffles were so light, fluffy and crispy. I had mine with a smear of orange marmalade. So yummalicious and easy to make.

I used homemade coconut milk instead of milk and coconut oil for the oil and I also left the sugar out and added some pure vanilla extract instead. They cooked so beautifully and tasted even better. Thanks again.

What does adding an egg to waffle mix do? ›

Eggs are a binder. Additionally, the yolk adds fat for flavor and protein to set the batter; the whites can assist as a leavener and they will help your waffles be fluffy as they release steam.

Should I use milk instead of water in waffle mix? ›

Instead of water, you can use whole milk to make your waffles extra rich. Typically, for one batch of waffles, you'll need 1 cup of water for every 1 cup of classic pancake mix. A couple of large brown eggs will also help your waffles have the perfect fluffy interior.

What is the secret to crispy waffles? ›

Is it better to make waffle mix the night before? ›

Waffles are easy – same ingredients as pancakes, just different ratios so they're crispy outside, soft and fluffy inside. You can make this waffle recipe right now, though if you make the batter the night before they're even better!

Is baking soda or baking powder better for waffles? ›

We use the two together for the fluffiest, best tasting waffles. The baking powder really does most of the lifting and makes the waffles fluffy, and the baking soda reacts with the buttermilk for tender waffles with a tasty tang (and helps contribute to giving them a little lift, too).

How do you keep homemade waffles from getting soggy? ›

Make Sure Your Waffle Iron Is Hot

The outer crust will immediately begin to set and crisp. Moisture in the batter quickly turns to steam and evaporates out the sides of the pan. If the iron isn't hot, none of this happens and the waffles will be soggy and squishy.

What makes Waffle House eggs so fluffy? ›

I haven't been to a Waffle House in years, but if I remember correctly, they whip each order of omelette eggs, individually, in a milk shake mixer. It's an old diner trick. The mixer whips air into the egg mix and when poured, immediately, into a hot pan, the eggs will soufflé, or become fluffy.

How do you add eggs to waffle mix? ›

Adding To The Batter

Once the rest of the waffle ingredients are prepared, slowly add the egg whites to the batter with a flat spoon or spatula. "Folding" is the technical term for this process, but just know that you want to add them in so that they stay relatively airy.

What is the best combination for waffle? ›

Of course, butter and maple syrup are a must have on a waffle board. Some of our other favorite toppings are fresh fruit, peanut butter, Nutella, honey, pecans, chocolate chips and whipped cream.

Can pancake mix be used as waffle mix? ›

Ingredients to Create Waffles from Pancake Mix

1 cup of Lehi Mills pancake mix. 2 tbsp of sugar. 3/4 cup of water. 1/4 cup of oil.

Why do my waffles taste bland? ›

Seriously, don't leave out the butter because they'll taste bland! So all super basic ingredients, but like I said—it's the ratio that matters. Make sure you add a dose of cinnamon for flavor and for a little necessary sweetness, a little brown sugar.

Can you put pancake batter in a waffle maker? ›

Turning Your Pancake Mix Into a Waffle Mix

You must double the amount of fat you use for the pancake mix. For example, you use 1 tablespoon of butter per cup of dry pancake mixture. Instead, add 2 tablespoons of butter to ensure the crispiness of the waffle. However, we recommend using oil over butter.

Should you let waffle batter rest? ›

Recommended overnight or 2 hr resting – for the tastiest waffles, rest the batter overnight in the fridge or for at least 2 hours. This makes the flour grains absorb the liquid so it makes the inside of the waffles softer.

Why are my waffles not light and fluffy? ›

Making pancake and waffle batter ahead of time is a huge no-no and will lead to flat, dense results every time. Even letting your batter hang out for just a few minutes after you've mixed it before you start ladling it onto the griddle will lead to less fluffy results.

Why do you let the batter rest when making waffles? ›

Let the batter rest for about 30 minutes.

The resting time allows the batter to thicken and the gluten to relax so you get that really tender and fluffy waffle interior rather than chewy waffles. (Here's a good article on what's happening while batter is resting, if you're curious).
